Where is the best bún bò in Saigon?
Bún Bò Huế Mệ Khánh (19 Hoàng Dư Khương, District 10) and Bún Bò Huế Ý (6 Nguyễn Văn Đậu, Bình Thạnh) are the most cited in Saigon. A bowl costs 60,000–90,000 VND. The Saigon version is milder than the Huế original — ask for thêm ớt (more chili) if you want it traditional.
Bún bò Huế arrived in Saigon with the Central Vietnamese migration and stayed, adapting to a southern palate that prefers things sweeter and less fiery. The best versions in Saigon are excellent bowls in their own right — they’ve just been gently tuned. If you want the original’s intensity, you need to go to Huế. But for Saigon, these spots are the benchmark.
Top spots
Bún Bò Huế Mệ Khánh — 19 Hoàng Dư Khương, District 10
Considered one of the most authentic Huế-style shops in Saigon. Run by a Huế-origin family — “Mệ” is a Huế term for grandmother/respected older woman. The broth has more lemongrass and shrimp paste than most Saigon versions, closer to the Central Vietnam original.
Open: 6am–1pm. Gets crowded by 7:30am.
Price: 65,000–80,000 VND.
Bún Bò Huế Ý — 6 Nguyễn Văn Đậu, Bình Thạnh District
The top Bình Thạnh option. Consistent quality and full portions. The chả cua (crab cake) here is dense and savory. Located in a residential area with local clientele — no tourist markup.
Open: 6:30am–2pm.
Price: 60,000–80,000 VND.
Bún Bò Bà Tuyết — 199 Trần Bình Trọng, District 5
A District 5 institution, popular with the Cholon Chinese-Vietnamese community. Slightly sweeter broth than the Huế norm — adapted to the District 5 palate over decades. The pork knuckle portion is generous.
Open: 6am–12pm.
Price: 60,000–75,000 VND.
Bún Bò Huế 2000 — 55 Trần Quý Khoách, District 1
The most central option for tourists based in District 1. Not the best bowl in the city but solid — good if you don’t want to travel to District 10 or Bình Thạnh for a bowl.
Open: 7am–3pm.
Price: 65,000–85,000 VND.
What to order
The standard bowl (tô đặc biệt) includes:
- Sliced beef (bắp bò)
- Pork knuckle (giò heo) — the fatty, collagen-rich cut
- Crab paste cake (chả cua) — a Huế specialty
- Round rice noodles (bún bò noodles, thicker than phở)
Additions:
- Thêm ớt: extra chili oil — ask for this if you want spice level closer to the original
- Thêm giò heo: extra pork knuckle, 20,000–30,000 VND
- Thêm huyết: pig blood cake, a traditional add-on
Side table setup
Like phở, bún bò comes with a plate of fresh additions: banana flower (bắp chuối bào), bean sprouts, and fresh herbs. Squeeze lime over the bowl after adding greens. Don’t put the fresh vegetables in the broth immediately — they wilt fast and you’ll lose the textural contrast.
