Cà phê trứng (egg coffee) is Vietnamese robusta espresso topped with a thick foam of beaten egg yolk, sugar, and condensed milk — somewhere between a dessert and a coffee. Café Giảng at 39 Nguyễn Hữu Huân invented it in 1946 and still serves the original. Price: 35,000–55,000 VND.
Cà phê trứng was invented during a milk shortage. In 1946, Nguyễn Văn Giảng was working at the Sofitel Metropole hotel and substituted beaten egg yolk for the condensed milk that had become scarce in wartime. The result tasted better than the original. He eventually opened his own café on Nguyễn Hữu Huân, and Café Giảng has been serving the same recipe for nearly eighty years.
What it is
The drink has a two-layer structure. At the bottom: Vietnamese robusta espresso, strong and bitter. On top: egg yolk beaten with sugar and condensed milk until it forms a pale, dense foam — similar in texture to zabaglione. The ratio is roughly 60% foam to 40% coffee.
You can drink it without stirring, spooning through the foam and letting the coffee rise underneath, which gives you the full contrast of bitter and sweet. Or stir everything together, which produces something richer and more uniform — closer to a dessert drink.
It’s served in a small cup resting in a bowl of hot water to keep the foam warm. Cold versions (cà phê trứng đá) are available in summer and taste substantially different — lighter, more milkshake-like.
Where to drink it
Café Giảng — the original. Two locations: 39 Nguyễn Hữu Huân (the original, up a narrow staircase, small rooms with wooden furniture) and 7 Đinh Tiên Hoàng (larger, more accessible). The Nguyễn Hữu Huân location is worth the effort — the physical space is part of the experience. 45,000–55,000 VND. Open 7am–10pm.
Café Đinh — 13 Đinh Tiên Hoàng, directly facing Hoàn Kiếm Lake. The balcony seating on the second floor overlooks the lake and the Tháp Rùa island. Egg coffee here costs 35,000–45,000 VND and the view justifies the small premium over strictly local spots. Gets busy on weekends. Open 8am–11pm.
Loading T Café — 8P Đinh Lệ, Hoàn Kiếm. Newer, slightly more designed space. Egg coffee 40,000 VND. Less history, more consistent seating. Good option if Café Giảng has a queue.
Giảng Café — not to be confused with the original Café Giảng. Several imitators use the name. The original is at 39 Nguyễn Hữu Huân — look for the handwritten signage and the staircase.
How to order
Ask for cà phê trứng nóng (hot egg coffee) or cà phê trứng đá (cold). Most cafés also offer cà phê trứng with coconut milk (cà phê trứng dừa) as a variation. Prices range from 35,000–55,000 VND depending on location and variation.
Locals typically sit with a single cup for 45 minutes to an hour. The drink doesn’t rush you. The older locations on Nguyễn Hữu Huân function as neighborhood sitting rooms as much as cafés.
What to know before going
The queue at Café Giảng’s original location is real during weekends and holidays. If you’re visiting on a Saturday morning, expect 10–20 minutes. The Đinh Tiên Hoàng branch has shorter waits.
Egg coffee is specifically a Hanoi thing. You’ll find versions in Ho Chi Minh City and Da Nang, but they tend to be blander adaptations. The original recipe is tied to the specific robusta grown in the north and the decades of refinement at a handful of Old Quarter cafés.
